Football is to Sunday as Tailgate is to…

I am going to take you on a trip down memory lane.  Remember when you did your SAT exams, those silly English questions that you had to answer.  Well I am going to present one last question to you:

Football is to Sunday as Tailgate is to…

Now, there is no correct answer to this, unlike our beloved SAT results, everyone gets an A! Tailgating is unique to everyone.  Everyone has a different experience, albeit in the parking lot of a stadium, or at a friend’s backyard, or just going to your local sports bar and getting ready for kick-off.

The premise for tailgating is the same. You have a group of friends, getting excited about the football match and doing your pre-game rituals, and just enjoying everyone’s company.  It’s the start of a great adventure that is in store.  I have been to my fair share of tailgating parties, and one thing that you will notice, especially if you are in the parking lot of Sun-Life Stadium is the aroma of food that is being prepared.

Each party has something different on the grill.  Burgers, Sausages, Chicken, chilli, I have even seen someone deep frying a turkey.   It’s crazy and so much fun at the same time.

One key recipe that we always rock out during Sunday afternoon’s is Conch fritters.  Enjoying the island life, we are blessed that this type of cuisine is available for Sunday afternoon’s.  If you don’t know what a conch fritter is, is basically a deep fried piece of fish that we serve with either a spicy or cilantro tartar sauce.  It’s one of the best snacks we have on the island…perhaps not the healthiest though

One key note – please make sure you tenderize the conch.  Trust me on this.

Another island favourite is grilled Mahi Mahi.  There isn’t a better fish to grill than Mahi Mahi, at least in my opinion.  Marinating that fish with some sour oranges, bell and goat pepper and some onions and you got yourself a magical treat.
